Golden Daughters of the Sun

Jerusalem artichokes are a wild sunflower native to the northern part of the continent, and there is a fine, tall thicket of them growing along a hydro easement  that runs down to the river. Sunny creatures they are. In places they are almost nine feet high and covered with golden blooms at this time of year. Beau and I always stop to admire them when our walks take .

The tubers are edible and look like ginger root. The taste is rather like water chestnuts and slightly sweet. Every once in a while, I consider digging up a few, but cannot bring myself to do it. I would rather look at them.
