This is the roof of the Fortune Farms sugar shack in the Lanark highlands, a commercial operation with a state-of-the-art reverse osmosis evaporator. I just love the way the sun hits the stacks and the green tin roof on a sunny day when syrup is being made.

Maple sap is sweet when it emerges from the tree in late spring - the evaporation process removes most of the water leaving a highly concentrated and much sweeter syrup. Absolutely heavenly stuff!
